Thai Slaw
Came up with this recipe inspired by the famous pad thai...
This is a cold slaw, spicy, crunchy, healthy, and no mayo.
1/2 head of cabbage, very thinly sliced
1/2 lb. rice stick, soaked 20 minutes, boiled 5 minutes, rinsed in cold water
1 Red Bell Pepper, very thinly sliced
1 Green Bell Pepper, very thinly sliced
1 bunch scallions - green onions
1 handful bean sprouts
optional veggies as you like: carrot, zucchini, peppers, eggplant, etc.
Sauce:
1 Tbsp Thai fish sauce
1 Tbsp sesame oil
1 Tbsp sugar
1 tsp rice wine vinegar
1 tsp tamarind paste (optional)
1 tsp soy sauce
1 tsp hot sauce (M.O.L.)
1 tsp salt
Mix all the veggies and noodle. Mix all the sauce ingredients, poor sauce over slaw and refrigerate an hour or more. Garnish w/ finely chopped peanuts and lime wedges.
